To begin our week we will prepare our chili lime marinade, roast our cherry tomatoes, cook our yams, make our avocado goddess sauce, and sear our chicken.
Our chili lime marinade contains cumin, coriander, paprika, light chili powder, cilantro, lime juice, and salt. We take blend these ingredients them into a smooth marinade that will flavor the chicken. We store the marinade with the chicken until we are ready to sear it later in the day.
Next, we roast our cherry tomatoes. By roasting our cherry tomatoes it allows them to provide more flavor to the dish and brings out a brighter color. In addition to the flavor and appearance benefits, roasting cherry tomatoes also brings out more of the nutrients and vitamins the tomato provides. While we roast the tomatoes, we also cook our yams. First, the chefs dice the yams. Next they cook them in the oven in order to soften them before they are cooked with all the vegetables.
Third, we will be making our avocado goddess sauce from scratch. The avocado goddess sauce contains avocado, cilantro, basil, jalapeno, lemon juice, and cumin. These ingredients are bleneded into a nice sauce that will pair nicely with the chili lime chicken meal prep.
Finally, to end the day, we sear the marinated chicken breast. Since the chicken has been sitting in the marinade, we sear it to lock in the flavor and provide a nice texture to the chicken. After a quick sear on the grill it is then put into the refrigerators where it will be stored until we finish its cooking.
